I make this recipe whenever I have surplus bananas, and this week I had a lot of them.
Banana Bread
- 1/2 cup butter or oil (I Can't Believe It's Not Butter)
- 1/2 cup raw sugar
- 3 ripe bananas
- 2 eggs
- 1 tsp vanilla (optional)
- 1 tsp baking soda
- 1 1/2 cups wheat flour (white or whole wheat, or a mix of both)
- 1/2 cup soy flour
- 1 cup walnut pieces (optional)
Mash bananas and set aside.
Melt butter spread in large bowl.
Blend in sugar.
Mix in eggs one at a time.
Mix in vanilla.
Mix in mashed bananas.
Sift in powdered ingredients and mix well.
Mix in walnuts.
Pour in to greased bread pan.
Bake at 350 for 60-75 minutes.
Since our oven is on the fritz I've been making this is the toaster over. For that I bake on 250-275 for a little over an hour.
Test the bread by poking it with a knife. When the bread is done, the knife should come out without any batter on it. Let the bread cool for a few minutes before removing it from the pan.
This recipe makes a really moist spongy bread. Don't skimp on the bananas, they are the best part.

This looks really good ,but as far as I'm concerned, walnuts are a must have..not optional.

I like the walnuts too but John doesn't. Fortunately I had more than enough bananas for two loaves.
