I've been busy with code, so not much to show here, but I've been meaning to share this recipe for awhile. It's the easiest potato soup ever.
Ingredients
- 1 med potato cubed
- 2 cups milk, 2% or less
- 2 tbsp potato flour
- 2 tbsp dried onion
- 1 tbsp "I Can't Believe It's Not Butter Light"
- 3 slices "Morningstar Farms" fake bacon (optional)
Instructions
- Pre-soften the potatoes in the microwave, about six minutes on high.
- Pre-cook the bacon in the microwave and break in to pieces.
- Stir dry ingredients (everything but the potatoes and bacon) in to the milk. Be sure to add the flour very slowly as you stir so that it doesn't clump.
- Then add the potatoes and bacon. Pepper to taste.
- Bring to a boil on medium, stirring constantly.
- Simmer until it's as thick as you want it, again stirring constantly.
That's it! The soup is ready to serve. This is great for a cold fall or winter evening.
