Potato Soup

RecipeI've been busy with code, so not much to show here, but I've been meaning to share this recipe for awhile.  It's the easiest potato soup ever. 

Ingredients

  • 1 med potato cubed
  • 2 cups milk, 2% or less
  • 2 tbsp potato flour
  • 2 tbsp dried onion
  • 1 tbsp "I Can't Believe It's Not Butter Light"
  • 3 slices "Morningstar Farms" fake bacon (optional) 

Instructions

  1. Pre-soften the potatoes in the microwave, about six minutes on high.
  2. Pre-cook the bacon in the microwave and break in to pieces.
  3. Stir dry ingredients (everything but the potatoes and bacon) in to the milk.  Be sure to add the flour very slowly as you stir so that it doesn't clump.
  4. Then add the potatoes and bacon.  Pepper to taste. 
  5. Bring to a boil on medium, stirring constantly. 
  6. Simmer until it's as thick as you want it, again stirring constantly. 

That's it!  The soup is ready to serve.  This is great for a cold fall or winter evening.

We tried quite a few more difficult recipes before I came up with this one. Not only is it easier, but I think it tastes better too.
